{"id":97942,"date":"2023-06-01T10:23:50","date_gmt":"2023-06-01T13:23:50","guid":{"rendered":"https:\/\/www.cordobatimes.com\/showup\/?p=97942"},"modified":"2023-06-01T10:23:50","modified_gmt":"2023-06-01T13:23:50","slug":"bacalao-a-la-vizcaina","status":"publish","type":"post","link":"https:\/\/www.cordobatimes.com\/showup\/cocina\/2023\/06\/01\/bacalao-a-la-vizcaina\/","title":{"rendered":"Bacalao a la Vizca\u00edna"},"content":{"rendered":"<h3><strong>Ingredientes<\/strong><\/h3>\n<ul>\n<li>4 lomos de bacalao desalado<\/li>\n<li>2 cebollas grandes picadas<\/li>\n<li>2 dientes de ajo picados<\/li>\n<li>4 pimientos choriceros ( o 2 cucharadas de t\u00e9 de piment\u00f3n dulce o ahumado)<\/li>\n<li>4 tomates maduros (o 1 lata de tomate triturado)<\/li>\n<li>50 ml de agua o caldo de pescado<\/li>\n<li>Aceite de oliva<\/li>\n<li>Sal\u00a0 y pimienta a gusto<\/li>\n<li>1 hoja de laurel<\/li>\n<li>papas cocidas para acompa\u00f1ar<\/li>\n<\/ul>\n<h3><strong>Modo de preparacion\u00a0<\/strong><\/h3>\n<ul>\n<li>Poner a hervir los tomates unos minutos para sacarle la piel y extraer la pulpa.<\/li>\n<li>En una cacerola o sart\u00e9n grande, calentar aceite de oliva y saltear la cebolla y el ajo picados a fuego lento hasta que est\u00e9n dorados.<\/li>\n<li>Agregar la pulpa de los pimientos choriceros, o el piment\u00f3n, los tomates, y el caldo o agua. Dejar cocinar durante 15 minutos.<\/li>\n<li>Incorporar la hoja de laurel y los lomos de bacalao desalados. Cocinar a fuego bajo por alrededor de 20\/30 minutos. Una vez cocinado el bacalao, retirar y reservar.<\/li>\n<li>Procesar la salsa con una licuadora de mano, hasta que quede homog\u00e9nea. Llevar de nuevo a la sart\u00e9n o cacerola y colocar el bacalao. Salpimentar a gusto y cocinar todo durante 5 minutos m\u00e1s.
