Seg\u00fan cuenta la leyenda, el locro es fruto de la cocina de los pueblos\u00a0originarios quechua, o quichua, que lo llamaron \u201cluqru\u201d o \u201crucru\u201d. Era un guiso que se preparaba a base de zapallo, ma\u00edz y porotos.\u00a0Su origen data de la \u00e9poca precolombina, es decir previo a la llegada de Cristobal Col\u00f3n.<\/p>\n<p>Se podr\u00eda decir que\u00a0es un tipo de cocina fusi\u00f3n: este guiso que preparaban los ind\u00edgenas se reinvent\u00f3 con ingredientes espa\u00f1oles como mondongo, cerdo y chorizo. Como su preparaci\u00f3n lleva tiempo, es un plato que se convierte en la mejor excusa para reunir a familiares y amigos.<\/p>\n<p>La tradici\u00f3n de comer locro el 25 de mayo se afianz\u00f3 en el siglo XX, pero\u00a0empez\u00f3 con la llegada del plato a las mesas porte\u00f1as a principios del XIX. Antes de 1820 el plato t\u00edpico era consumido principalmente en Salta, Tucum\u00e1n, C\u00f3rdoba y el norte de Santa Fe.
