Bajar a la mesada y amasar bien hasta lograr una masa uniforme. Descansar 30 minutos envuelta en film.<\/p>\n<p>Estirar bien fina varias veces y colocar sobre molde de Sorrentinos, rellenar y cubrir con otra fina masa (mojando los bordes con agua para que pegue). Pasar el palote para cortarlos y hervir en agua y sal.<\/p>\n<p><strong>Para el relleno,<\/strong>\u00a0rallar la mozzarella y mezclar en un bol con el huevo y la sal.<\/p>\n<p><strong>Para el estofado,<\/strong>\u00a0picar todos los vegetales y rehogar en sart\u00e9n con aceite. Sumar la salchicha trozada y la paleta cubeteada y condimentar.<\/p>\n<p>Cuando la carne est\u00e1 dorada, desglasar con vino blanco y cubrir con tomate triturado.
