Llevar a marinar a la heladera 30m.<\/p>\n<\/li>\n<li data-reactid=\"250\">\n<p data-reactid=\"251\">Sellarlo bien por ambos lados y los laterales, pasarlo a una placa para horno y terminar su cocci\u00f3n en 10m.<\/p>\n<\/li>\n<li data-reactid=\"252\">\n<p data-reactid=\"253\">En la misma sart\u00e9n donde se cocino la carne realizamos la salsa fundiendo la manteca, dorando la cebolla y levantando el fondo de cocci\u00f3n con el vino. Incorporar el<\/p>\n<\/li>\n<li data-reactid=\"254\">\n<p data-reactid=\"255\">caldo y dejar reducir con fuego m\u00ednimo. Agregar la nata, la mostaza de dijon. Mezclar y retirar del fuego.<\/p>\n<\/li>\n<li data-reactid=\"256\">\n<p data-reactid=\"257\">Para el pur\u00e9 dorar la panceta y el puerro. Retirar y unir junto a lal papa pisada y un poco de manteca.
