Agregar el chocolate fundido e integrar.<\/p>\n<p>Sumar las galletitas rotas, los copos y mezclar.<\/p>\n<p>Pasar a una placa en molde rectangular (alto y largo), emparejar y llevar a fr\u00edo.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Para la crema,<\/strong>\u00a0mezclar las yemas con el huevo, el az\u00facar, el jugo, manteca derretida pomada y ralladura. Cocer a ba\u00f1o Mar\u00eda hasta espesar. Retirar del fuego.<\/p>\n<p>Aparte, hidratar la gelatina en jugo de lim\u00f3n. Agregar a la preparaci\u00f3n anterior equiparando densidades.<\/p>\n<p>Bajar la temperatura a 30 grados e integrar la crema de leche a medio punto y el merengue.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Para la compota<\/strong>, descarozar las cerezas y colocar en un bol con az\u00facar, el jugo de lim\u00f3n, almid\u00f3n de ma\u00edz y agua. Mezclar.<\/p>\n<p>Envolver en film y cocer a ba\u00f1o Mar\u00eda. Reservar en heladera.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Para el glaseado,<\/strong>\u00a0fundir a 45 grados el aceite y el chocolate blanco, colorear. Agregar las almendras picadas. Reservar y utilizar a 35\u00b0C.<\/p>\n<p>&nbsp;<\/p>\n<p><strong>Para el armado,<\/strong>\u00a0forrar un molde con pionono (base y bordes) y cubrir hasta la mitad con la crema de lim\u00f3n. Sumar las cerezar cubrir con pionono. Volver a rellenar con la crema de lim\u00f3n. Freezar.<\/p>\n<p>Desmoldar y ba\u00f1ar con el glaseado crocante.
