Salpimentar y condimentar.<\/li>\n<li>\u00a0Estirar el vac\u00edo sobre la mesada y desgrasar.\u00a0 Cubrir la mitad con panceta y el salteado m\u00e1s el queso rallado. Doblar como libro y cerrar con palillos y\/o hilo parrillero.<\/li>\n<li>Salar de ambos lados y llevar al horno medio en fuente con base de aceite de oliva por unos 40 minutos. Si se seca la base agregar agua.<\/li>\n<li>\u00a0Para las papas, hervirlas con piel en agua y sal y cortar en cubitos. Saltear en oliva y manteca, sumar el ajo y perejil picados, Desglasar con vino blacno. Cuando evapora el alcohol, salpimentar y terminar con la crema de leche.
