Amasar bien hasta lograr una masa firme y descansar en fr\u00edo.<\/li>\n<li>Estirar bien fina y cortar c\u00edrculos de unos10 cm. Reservar con film entre cada una.<\/li>\n<li>Para el relleno, en un bol, mezclar bien la ricota con la mozzarella rallada y las nueces picadas y tostadas junto con el huevo y el tomillo.<\/li>\n<li>Armar los agnolotti dando la forma correspondiente (ver video). Y hervir en agua y sal hasta que floten.<\/li>\n<li>Para el estofado, en sart\u00e9n con oliva, dorar las rodajas de carne de ambos lados y sumar la zanahoria, morr\u00f3n, apio y cebolla fileteados m\u00e1s los ajos enteros. Condimentar y transparentar los vegetales.<\/li>\n<li>Desglasar con vino blanco y cuando evapora el alcohol agregar el tomate y el laurel.
