Licuar o procesar.<\/p>\n<p>Marinar la bondiola en una fuente para horno, cubrir con aluminio y llevar por un par de horas a la heladera.<\/p>\n<p>Dejar enfriar la fuente y llevar al horno medio por unas 3 horas, agregar l\u00edquido (jugo de naranja y lim\u00f3n) si hay evaporaci\u00f3n y girando la pieza para obtener una cocci\u00f3n pareja, cerrando bien con el aluminio cada vez que lo hacemos. Reservar.<\/p>\n<p>Hervir las batatas peladas en agua y sal. Pisarlas y reservar. Aparte hacer un caramlo con el az\u00facar. Volcar el caramelo sobre el pur\u00e9 e integrar.
